DSK Farm Kelp Pesto
Pesto has so many amazing uses. I like to toss it in pasta, or serve on fresh fish. But you can also spread it on sandwiches or simply use it as a dip. People use Sugar Kelp Pesto gain all the traditional pesto uses, with added benefit of nutrient rich umami flavor.
Ingredients
¼ cup toasted pine nuts
½ cup garlic cloves
½ cup dry Parmesan cheese
½ cup extra virgin olive oil
1 cup fresh basil leaves
3 cups blanched sugar kelp
Preparation
Blanche fresh sugar kelp for approximately 10 seconds (until it turns bright green) then set aside to dry.
The best pesto has a mixture of fine and rough pieces of in the finished sauce, so process half the fresh basil and kelp first.
Then combine pine nuts, garlic, and parmesan into a food processor and mix on pulse.
Once evenly distributed, stream in olive oil and the remaining basil and kelp using a steady pulse until the pesto reaches a rough texture.
